1 tsp sesame seeds
1 ½ tbsp low –sodium soy sauce
4 skinless salmon fillets, about 5 oz each
5 cups firmly packed baby spinach or torn spinach leaves

2 cloves of garlic minced
Place the sesame seeds in a small, dry non-stick frying pan over medium high heat. Cook, stirring often, until lightly toasted, (3-5) minutes. Transfer to a plate to cool and set aside.
Brush soy sauce over top the salmon fillets. Grill or Broil without tuning until the fish is opaque throughout when tested in the center with the tip of a knife, (6-8) minutes.
While the salmon is cooking place the spinach in a colander and rinse under cold water. Shake off the excess water, but do not dry the spinach. Coat the inside of a large saucepan with cooking spray and place over medium-high heat. Add garlic and sauté for 1 minute. Add half of the spinach, cover and cook, stirring frequently until the spinach is wilted about 1 minute. Add the remaining spinach. Cover and cook until all the spinach is just wilted, about 1 minute longer. Drain any remaining water.
Divide the spinach among individual plates and top each portion with a salmon fillet. Garnish with the toasted sesame seeds and serve.
