THis recipe was a challenge - Canadian Bacon produced no drippings so I used a bit of olive oil for the onions and green peppers. The 4 cups of water called for were used up even at the lowest heat setting on my cook top. I salvaged 1/2 beans, added a can of tomatoes and 2 more cups of water to cook the rice and finish the beans. Total cook time was less than 90 minutes. I think it would have been boring without the tomatoes - never had origninal Hoppin' John so nothing to compare to.
