I tweaked this recipe and I like my version. I used a mixture of Dijon and yellow mustard because I found straight Dijon too overpoweringly hot. Instead of non-stick spray I used a teaspoonful of canola in a non-stick pan. I did this because using non-stick spray resulted in the bread burning way before the cheese melted. I do count the extra ppv for the oil. Even my way the cheese softens but does not really melt, if you want the bread just grilled and not burnt. Great lunch!
