Awesome! The mustard was not overpowering at all. I was confused with the directions. It says to coat top with REMAINING mustard mixture and cook to 110 deg. Then, use the REMAINING mustard mixture (again??) & press herb mixture into mustard. I used half the mixture & coated top & sides, cooked to 110 deg. Mixed the herbs into the remaining mustard mixture, coated it again & cooked it to 160 deg. which is medium (2 hours total - mine was a 3 lb roast). Cooking it to 140 deg. will be rare.
