Delicious! I used carrots, broccoli, cauliflower, canned corn ( 1), and a can of no-salt-added stewed tomatoes. I hate chopping onions so used onion powder instead; i had minced ginger/garlic so used that in place of garlic cloves. Sprinkled in thyme, pepper, epicure red garlic sansel, and clubhouse garlic plus! I also added quinoa because I felt I needed a bit of protein. I didnt use lemon juice or chives. Verdict: Excellent!! The corn added a nice bit of sweetness to it too!
