BBQ Chicken Snacks

Ingredients
- 1/4 cup cooked, shredded chicken
- 2 Tbsp barbecue sauce
- 2 tsp thinly sliced red onion
- 2 Quaker® Original Large Rice Cakes
- 1 Tbsp low-fat shredded sharp cheddar cheese
- 1 tsp chopped cilantro
Instructions
- Combine chicken, barbecue sauce and red onion in small microwave-safe bowl; mix well. Microwave on HIGH (100% power) for 30 seconds, or until heated through. Divide and spread mixture evenly over rice cakes. Sprinkle with cheese and cilantro. Yields 1 rice cake per serving.
